Keep in mind that kombucha is a fermented sweet tea. The vinegary smell you sense is a byproduct of the fermentation process. Interestingly, the longer the tea ferments, the stronger that vinegar smell becomes. In fact, if you were to leave kombucha in a warm spot, like a car, and then open it days or weeks later, it will smell much more vinegary than if you purchase it cold from a store and open it. Home-brewed kombucha typically has a stronger vinegar profile than commercially-made kombucha because the process is less controlled.
It’s Fizzy
Now, it’s time to taste your kombucha. When kombucha hits your tongue, you’ll notice a slight effervescence – a little tingle on your tongue. That fizzy sensation is yet another byproduct of fermentation. It’s the carbon dioxide that is released from the yeast and beneficial bacteria that is feeding on the sugar. Carbonation is a natural byproduct of the fermentation process.
It’s Zingy
That hint of vinegar adds a bit of zing to kombucha, but so does the natural carbonation. What results is a slightly tangy, tart finish that wakes up your tastebuds without making you pucker.
